Monday Morning Egg Sandwich My Way!


Yes, I ate this for breakfast.  I had to go for a long walk afterwards.  It was glorious.  Of course I really made it for the girls - you know, to give them a good start to the day - get them off on the right foot - they liked it a lot.  I went overboard but why not - don't you need something to get you started on Monday morning? 

Adjust amounts to appetite and mouths;

Muffins
Bacon
Eggs
Baby spinach
Tomatoes
Grated cheese

These are actually quick to make, much quicker (and better) than jumping in the car to go to the MacDonald's drive through.  There's no real recipe just;

Put on the bacon,

While that's sizzling, poach the eggs in a pan of water with a splash of white vinegar.  When they're how you like them, remove them with a slotted spoon and leave to drain for a minute or two.

Put your muffin in the toaster.

When the bacon's done, chop it up, then throw in a couple of handfuls of baby spinach and a few slices of tomato into the hot bacon fat (yum) and heat through.

Grate some of your favorite cheese.

Assemble your muffin. 

Serve with some serious coffee and start the week in the right frame of mind.

  1. This breakfast sandwich looks divine! My fiance and I make sandwiches like this on the weekends sometimes if we're able to have a lazy weekend morning. :) So delicious and comforting!

  5. You definitely have McDonalds beat with this one! Love the fresh tomato and spinach, it makes all the difference in the appearance as well as taste. Not to mention more nutrition-great post!

  12. Yes, that is a gorgeous place where you walked the dog. OK, a McDonald's Egg McMuffin is my ONLY guilty pleasure at the Golden Arches...on rare occasion. But this sandwich looks much better, colorful and flavorful. Beautiful sandwich.

  13. Such a beautiful and peaceful place to walk. My daughter would love this for breakfast. I make her 2 fried egg whites every weekday but I am to lazy to cook up bacon during the week. I save bacon for the weekends ;)
